There is a long history behind Don Carlos. Our traditional restaurant of meats, whose name pays tribute to Carlos Gardel, was founded in Buin, in 1985, by the Argentine Carlos Sampieri, who at that time did not He knew a lot about cooking, but – like any good Trans-Andean – he was an expert.

Griller and, above all, knowledgeable about the ideal cooking points for each cut. For this reason, he eradicated the traditional braziers from his premises: they did not was willing to overcook the meats he imported directly from the Argentine pampas. This is how the place quickly gained fame, thanks to its barbecues with wood embers and innovative cuts for the time, such as tail of cuadril and the prod tip.
