“For the pizzas, the dough recipe is our own, made with Italian grain, leavened for more than 24 hours and combined with house products, such as San Marzano tomato sauce and Gandolini olive oil, produced by ourselves; and some products from our own garden, such as basil and arugula. We also import others from each Italian region, such as Mozzarella della Campania, il Prosicutto di Parma, Mortadella di Bologna, among many others,” explains Alfonso.
