All this, with the unparalleled seal of the renowned chef, Francis Mallmann and an extensive wine list where you can choose among the different vintages of Montes wines and others from the Colchagua Valley.
The cuisine features meat, fish, and vegetablesprepared with different types of fire in the specially designed dome located in the centre of the restaurant, where visitors can see how the ingredients are grilled, smoked, and baked in preparation for the dishes listed on the menu.

Francis Mallmann’s passion for wood fires gave rise to the gastronomic proposal at Fuegos de Apalta.
