La Calma, en enkel och mysig plats som har en stor utomhusterrass, där Layera endast förbereder det havet ger den varje dag. För detta samarbetar han tätt med hantverksfiskare från vikar som sträcker sig mellan San Antonio och Los Vilos och naturligtvis med dykare och skaldjursplockare, som levererar de bästa marina produkterna som, för bara tolv timmar sedan, simmade glatt i havet.

Av samma anledning ändras menyn hela tiden. Vissa dagar kan du hitta rockor, kolja och sardiner; andra dagar de bästa tonfiskarna, musslorna och musslorna. Och ibland lyxprodukter som är svåra att hitta någon annanstans, som de dyrbara chochas: en delikat blötdjur som är rikligt förekommande i Coquimbo Region, med en fräsch, krämig och elegant smak.
