Uno de los responsables del grupo comercial vinculado a Gastón Acurio, el chef peruano que tiene la cocina peruana como bandera. En este nuevo restaurante, Acurio cuenta con una reconocida aliada: Martha Palacios, la cocinera que fue elegida Mejor Chef, en los Premios Luces de Perú y quien en Panchita es la jefa de cocina. Con su llegada, Palacios trae a Chile toda la picardía y sazón de este restaurante conocido por su mezcla de cocina criolla, con platos que recopilan recetas ancestrales, muy abundantes y carnes a la parrilla.
