In the same line, we do a conscious work with the four seasons: our biointensive Alaia garden allows us to obtain organic fruit, vegetables and herbs, with an incomparable quality and freshness. Likewise, our philosophy for fishing: we respect the cycles and use what nature provides, supporting sustainable artisanal fishing.

Our dishes seek to be a multi-sensory experience, so our staff is at your disposal to find the perfect wine that accompanies the chosen plate. Our proximity to the most important area of ​​Chile in wine production, the Colchagua Valley, allows us to offer world-class wines made within 100km of our hotel. On the other hand, we offer exquisite craft beers produced in the area.
