At Hotel Alaia we know that gastronomy is a way of tourism and sightseeing, so we put on the table the best of the area. We seek to strengthen the agricultural inputs of the area, working side by side with small local producers, promoting local agriculture and fishing, reducing our carbon footprint. In the same line, we do a conscious work with the four seasons: our biointensive Alaia garden allows us to obtain organic fruit, vegetables and herbs, with an incomparable quality and freshness. Likewise, our philosophy for fishing: we respect the cycles and use what nature provides, supporting sustainable artisanal fishing.
Our dishes seek to be a multi-sensory experience, so our staff is at your disposal to find the perfect wine that accompanies the chosen plate. Our proximity to the most important area of Chile in wine production, the Colchagua Valley, allows us to offer world-class wines made within 100km of our hotel. On the other hand, we offer exquisite craft beers produced in the area.
