99 Restaurant
For many years 99 restaurant was a showcase of Chilean cuisine, bringing northern and southern Chile to the table. In this new version we will take a trip through the wine valleys, starting with the huasco, We start in transit. Valleys of Chile The objective of this proposal is to discover Chile enogastronomically through its valleys, to value those products from our pantry that have been forgotten or replaced due to disaffection with ours. Huasco Valley We begin our trip through this valley located where the Huasco River runs, in the Atacama Region. From the city of Vallenar we begin to tour the valley from coast to coast, from Chañaral de Aceituno to the Tránsito mountain range area. We toured this wonderful oasis in search of the area's iconic products, our designations of origin. We met with producers of olive oil, the famous cracked olive, and also with artisanal cheese factory projects where – under extreme conditions – they produce unique cheeses in Chilean territory. Finally, we access raw materials unbeatable, such as local goat and river shrimp, which contain flavors that represent the spirit of the valley. We share with vintners who experiment with new strains and others who maintain the tradition of producing our oldest appellations of origin, such as the fascinating “pajarete”. Likewise, due to its importance, we visited the famous pisco distillers in the area, which have become part of Chile's identity. With all this knowledge, value, experiences and products we return home, where a kitchen based on fires awaits us. Since prehistoric times, fire was something that amazed man and his communities. The discovery and control of fire was a representative step for our development as individuals, used as an instrument for hunting, shelter and – of course – for cooking. This transformation element will be the intermediary between the product and the diner. 99, a restaurant full of flavor that connects with the territory
