Never before had it been possible to eat at La Vinoteca. That, until a couple of weeks ago, that opened the 3rd restaurant. Floor, precisely at that level of the shop specializing in wines from Nueva Costanera.
With a sober atmosphere, with classical music at low volume and minimalist decoration, it is better to go on a Saturday, because trying a six-course tasting menu requires a couple of hours.
Behind the dishes there is Ignacio Ovalle, the same chef who was in charge of the now defunct Opera restaurant, work for which he received several critics' awards.
The menu changes every week, but among the dishes that may touch you is the soft lamb -cooked for 24 hours at low temperature to be tender-, accompanied by a green puree or seasonal vegetables al dente.
That, plus a syrah from the vineyard Von Siebenthal or from a sauvignon blanc from vineyard Garces Silva, because the six dishes that will arrive at your table include two glasses of wine for you to choose which is the one that best matches.
