Borago

Top 10 restaurants in Santiago de Chile
EAT
In our effort to reflect what the soil gives us, we have brought the best products from a somewhat unusual corner of our planet, which we consider invaluable. Our tasting menus collect and combine the best endemic product of the Chilean territory, in continual evolution throughout the year. Much of the food is cut from soils not intervened, by collecting communities and small producers throughout Chile, which is why the dishes can vary even during each course.
WATER
The water served in Boragó comes from the rain of Patagonia, with a high degree of purity.
MILK
The milk used, especially in our ice cream, is milked by us and comes from natural aging.
WINES
We do not have a wine list. In return, we seek to add the effort of family projects full of passion. We have a wine pool. These represent particular conditions in the Chilean territory, occasionally with surprising results.
VEGETABLES
30 minutes from Boragó, we grow vegetables our way, with maximum use and always in the most natural way.
HARVEST
We understand the restaurant as a provider; One day we can cut a wild fruit that grows three weeks a year at 3,500 meters and the next, unique mushrooms from a forest.
SEA
We work without intermediaries, but directly with fishermen.
SMALL PRODUCERS
There are more than 200 collectors and small producers throughout the country. They have the same role as the rest of the team. Unfortunately, they are not visible in our dining room, but without them, we could not even give 10% of the food we offer.

About the chef: Born in Madrid, Barroso worked at El Bulli and Denis Martin in Switzerland before he moved to Chile in 2012. Restaurant 040 opened in 2015.
Typical dishes: Barroso's cooking style is clearly shaped by his time at El Bulli with options such as sous vide egg yolk combined with glazed peas, chicken stock and bacon foam, served in the shell on a bed of hay. Another highlight is intense Chilean sea urchin, which is given a savoury depth with slivers of fried chicken skin.
A few words on the room: Red roses, white faux-baroque furniture and huge glass doors leading onto a terrace and pool, it's a seductively romantic space that attracts a well-heeled clientele.

Confiteria Torres

Top Chilean Restaurants in Santiago de Chile you must try
The origin of this confectionery goes back to 1879. A family of the santiaguina aristocracy had a butler, José Domingo Torres, famous for his good hand to prepare mistelas, alfajores, pheasants, civet and other delicacies. So this famous cook was requested on loan by other owners of family friendly houses. This situation became so extreme that the boss, bored with almost no services, decided to install his own business. The house that the Torres confectionery occupies was the Íñiguez palace, built by the architects Alberto Cruz Montt and Ricardo Larraín Bravo for the family of Antonio Íñiguez Larraín. Regular customer of this confectionery was President Arturo Alessandri Palma. The anecdote says that the presidential delegation passed by the Torres and the President exclaimed: "I'm scared of thirst, I walk with the hot irons"; He ordered his car to stop and went inside to drink a cane of chicha. For the celebrations of the Centennial of Independence in 1910, the honor Vermouth was served here to the diplomatic corps. Confectionery Torres, Alameda The Torres confectionery however had a decline that made its former owners finish it in 2002. Its new owners are the Commercial Engineers Claudio Soto Barría and his wife Patrizia Misseroni Raddatz. The task was enormous to perfect it; They took a year and their cost to fix it was 500 thousand dollars (three hundred million pesos). They started in July 2002 and went live on May 8, 2004; Its official opening was in September 2004. It conserves one of the oldest waiters, Don José Santos, who has been on the premises for over fifty years, and Don Belisario Maturana, who has worked there since 1984. In 2006, a new store of Confectionery Towers was inaugurated in the Palacio de la Moneda Cultural Center, participating in the society, the Greek Georgios Libertatos and Antonella Misseroni Raddatz. This place is frequently visited by authorities. It is a modern establishment, the civic heart of Santiago, a meeting point for national and foreign personalities. Bruno Sacco, a civil engineer by profession, after working for more than ten years in Rome, in the World Food Program of the United Nations, evaluating projects in developing countries, decided to return to his native Chile and open a restaurant in Italian food. Thus it delighted the santiaguinos in his "The Divine Food". In the early nineties decided to organize a national contest, this time aimed at the owners of the house, in order to rescue the tradition of Chilean cuisine. Pleasantly surprised by the amount and variety of delicious dishes that came to light thanks to the contest and, noting that in Santiago were few places of good level with Chilean cuisine offer, he decided in 1991 to open the Chilean Divertimento with dishes of wide local roots . Little by little El Divertimento Chileno was transformed into a center of Chilean cuisine, where politicians, artists, television people, journalists and abundant foreign public who want to know and taste Chilean cuisine go. Lunch time is especially busy. In 2009, the Circle of Gastronomic Chroniclers of Chile awarded us the prize for the best Chilean restaurant in the country. El Meson Nerudiano Restaurant

Top Chilean Restaurants in Santiago de Chile you must try
The spirit of a poet lives among the walls of our beloved restaurant. This is how El Mesón Nerudiano, housed in a house erected in 1910, located at number 35 Calle Domínica, recreates an atmosphere inspired by the unmistakable magic and style of Pablo Neruda's houses, such as "La Chascona" - the traditional abode of writer and his wife Matilde, current Museum of the Neruda Foundation - of which only a couple of blocks away, in the mythical Barrio Bellavista. As soon as you enter the premises, we feel that it is not just a restaurant. El Mesón Nerudiano is a subtle mix of ingredients that go beyond the ineffable experience of an exquisite dish: the noble materials, the intimate spaces that provide a good meal, a good conversation, the old barrels and shelves and an infinity of details in its architecture that make feel the presence of Neruda as much as the gastronomy, carefully inspired by the flavors that the poet himself liked at home. This magical atmosphere is composed of three levels: a first floor that interlaces restaurant and main bar. In the second level we find a terrace that embraces the panoramic view of Cerro San Cristóbal; There is also a loft with tables near the wine pantry. Finally, we descend to the underground, where the vaulted space shelters a rustic setting - in the purest style of "Cavern" (which saw the birth of The Beatles) - in which all artistic expression takes place.

Borago

Best restaurants in Santiago de Chile for Wine Lovers

Concept It is a concept of unique wines, based on REcrear, REinventar and Reveal, ancestral wines from the biblical stories to the wines produced in the past centuries by the family in noble and beautiful clay jars. Beauty wines are born. Only It conserves the family maulina jars and in it it partially elaborates its wines, in order to demonstrate that wines of excellence can be made with the ancestral procedures and the current knowledge and also BODEGAS RE, designed, calculated and RE created, the old tinajas turning them into giant amphoras, of a unique character in the world, of an extraordinary quality and an unsurpassed beauty So then, they reap the wines of ancestors, they RE survive their artisans creating imaginary wines, RE inventing dreamed wines and the beauty of RE wines. Family Wines It is a small family vineyard, formed after a long viticultural trajectory, by Pablo Morandé and his children, with a vision very united to man, his history, customs, traditions and also gastronomy. The story is as long as it is recent. Long because Pablo is the ninth generation of the first Morandé who planted vineyards in Peñaflor, who produced wines and liqueurs in jars and fifth generation of the Lavín and Urrutia owners of extensive vineyards in Cauquenes de Maule, viticulture that deeply marked the thinking and dream of their wines . Then the discovery of Casablanca and being a pioneer in its wines of modernity and elegance, have allowed a combination of fundamental elements to come to conceive RE wines, where history is the basis of modernity. And short, because the decision to make wines with his family, with his professional children in viticulture and oenology, Macarena, Piedad and Pablo, just started with the 2008 season, a process that led to the construction of BODEGAS RE.
